I am so proud of my son Ephraim!!  He gave his very first violin performance tonight at a high school.  He wasn’t nervous at all.  As a matter of fact, he loves being on stage and being the center of attention. 😀

Ephraim was the first soloist of the night; probably because he was the youngest performing.  He walked right up on stage, leaned over into the microphone and said, “My name is Ephraim.  I am 5 years old and I’m going to play ‘Seminole Chant’.”  He started playing immediately without giving his auntie time to accompany him on the piano.  Everything happened so fast I didn’t get any pictures of the actual performance. 😐 

The audience laughed and clapped as he bowed two times (I didn’t teach him that) and galloped off the stage.

I did manage to get a picture before the performance though.

As we were driving home Ephraim said, “Thank you mom for teaching me how to play the violin.”  Actually, I don’t teach him, his auntie does.  But I do make him practice and I got a violin to learn with him.  We have fun when we get to play together.

It’s amazing the kind of help you can get when you tell your friends and family that you’re homeschooling your kids.  Dr. D attends our church (The Church of Jesus Christ of Latter-day Saints).  I went to visit her one day and told her I was homeschooling my kids.  As a retired school teacher with a Masters in Biology and PhD in Business Administration & Social Change, Dr. D offered her help.  She has been teaching the kids each week about how to grow a garden.

So far, my children have learned how to plant seeds, water plants, apply fertilizer, thin out plants, identify weeds and remove them, and thank God for helping the plants to grow.

Last week we harvested mustard greens, turnip greens, bok choy and green onions.  I made a wonderful pot of stew with the mustard greens.

Can’t wait to learn more from this awesome teacher!  Thanks Dr. D!!! 😀

Just about every Zucchini Bread recipe I’ve tried has been pretty good but kept me looking for something more. Well, I think I finally created the ultimate basic Zucchini Bread recipe.

Most of the recipes I tried only called for 2 cups of shredded zucchini. I found one recipe that went as high as 3 cups. My recipe calls for a whopping 4 cups of shredded zucchini!!!

The zucchini makes the bread more moist and flavorful.  As you can see in the picture below, my family has already eaten this bread down to almost half and I just made this 15 minutes ago.  I figured I’d better take a picture quick. 😀

Alberta’s Zucchini Bread Recipe (makes 2 loaves)

Ingredients:

  • 4 eggs
  • 2 c sugar
  • 1 c  oil
  • 3 tsp vanilla
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp salt
  • 2 tsp baking soda
  • 3 c flour
  • 4 c zucchini, shredded

Directions:

Preheat oven to 350°F. 

Mix all wet ingredients together and then mix in the dry ingredients.  Let sit for 10 minutes.

Grease and flour 2 loaf pans.

Add shredded zucchini to batter, then pour evenly into pans. 

Bake for 1 hour (60 minutes) or until toothpick inserted comes out clean.  Let cool for 10 minutes then remove from pan to cool completely on rack.

I’m always looking for free printables for my kids to work on during homeschool and downtime.  I found some free Color ‘n Cut Projects from Westcott, an Australia scissor company. 

These projects are great for early learning, fine motor and scissor skills.  The drawback is it sucks up a lot of ink.  I printed mine in grayscale and will have the kids work on them today.
